Panna Cotta with Berry Compote
A classic Italian dessert of sweetened cream thickened with gelatin and molded, served with a fresh berry compote.
Ingredients - Serves 4
- Lemon juice - 1 tablespoon
- Mixed berries - 2 cups
- Vanilla extract - 1 teaspoon
- Sugar - 1/2 cup
- Heavy cream - 1 1/2 cups
- Whole milk - 1 1/2 cups
- Unflavored gelatin - 2 teaspoons
Let's Get Started
- Sprinkle the gelatin over the milk in a saucepan and let stand for 5 minutes to soften.
- Heat the milk over medium heat until hot but not boiling. Stir in the sugar until dissolved.
- Remove from heat and stir in the heavy cream and vanilla extract.
- Pour the mixture into 4 individual serving dishes and refrigerate until set, about 4 hours.
- To make the berry compote, combine the mixed berries and lemon juice in a saucepan. Cook over medium heat until the berries release their juices and the mixture thickens, about 10 minutes.
- Let the compote cool, then spoon over the chilled panna cotta before serving.
