Pad Thai Shrimp
This delicious Pad Thai Shrimp recipe features stir-fried rice noodles with succulent shrimp, crunchy peanuts, and tangy lime.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Sugar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Fish sauce - 3 tablespoons
- Lime - 1, juiced
- Peanuts - 1/4 cup, chopped
- Green onions - 4, sliced
- Bean sprouts - 1 cup
- Eggs - 2
- Garlic - 3 cloves, minced
- Shrimp - 1 lb, peeled and deveined
- Rice noodles - 8 oz
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together the lime juice, fish sauce, soy sauce, and sugar. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and garlic to the skillet and cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from the skillet and set aside.
- In the same skillet, push the shrimp and garlic to one side and crack the eggs into the other side. Scramble the eggs until cooked.
- Add the cooked rice noodles, bean sprouts, and green onions to the skillet. Pour the sauce over the noodles and toss everything together until well combined.
- Cook for an additional 2-3 minutes, or until the noodles are heated through.
- Remove from heat and garnish with chopped peanuts.
- Serve hot and enjoy!
