Pad Thai Shrimp

Ingredients - Serves 4

Let's Get Started

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, and sugar. Set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the shrimp and garlic to the skillet and cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from the skillet and set aside.
  5. In the same skillet, push the shrimp and garlic to one side and crack the eggs into the other side. Scramble the eggs until cooked.
  6. Add the cooked rice noodles, bean sprouts, and green onions to the skillet. Pour the sauce over the noodles and toss everything together until well combined.
  7. Cook for an additional 2-3 minutes, or until the noodles are heated through.
  8. Remove from heat and garnish with chopped peanuts.
  9. Serve hot and enjoy!
