Pad See Eiw
Pad See Eiw is a popular Thai street food dish made with thick rice noodles, soy sauce, and a protein like chicken, beef, or tofu.
Ingredients - Serves 4
- Chinese broccoli - 1 bunch, chopped
- Eggs - 2
- Chicken - 1/2 pound, sliced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Sugar - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Soy sauce - 1/4 cup
- Wide rice noodles - 8 ounces
Let's Get Started
- Soak the rice noodles in warm water for 15 minutes, then drain and set aside.
- In a small bowl, mix together the soy sauce, oyster sauce, and sugar.
- Heat the oil in a wok or large frying pan over medium heat. Add the garlic and cook until fragrant.
- Add the chicken and cook until no longer pink.
- Push the chicken to one side of the pan and crack the eggs into the other side. Scramble the eggs and cook until set.
- Add the noodles and sauce to the pan and stir to combine.
- Add the Chinese broccoli and cook until wilted.
- Serve hot.
