Pacific Oyster Rockefeller
A classic appetizer, Pacific Oyster Rockefeller combines fresh oysters with a rich spinach and cheese topping, all baked to perfection.
Ingredients - Serves 4
- Salt and pepper - To taste
- Breadcrumbs - 1/4 cup
- Parmesan cheese - 1/2 cup, grated
- Heavy cream - 1/4 cup
- Pernod - 1 tablespoon
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Spinach - 1 cup, cooked and drained
- Fresh pacific oysters - 12
Let's Get Started
- Preheat your oven to 450°F (230°C).
- Shuck the oysters, keeping them on the half shell.
- In a skillet, melt the butter over medium heat. Add the garlic and cook until fragrant.
- Add the spinach, Pernod, heavy cream, half the Parmesan, and salt and pepper. Cook until the mixture is thickened.
- Spoon the spinach mixture onto each oyster, then top with the remaining Parmesan and breadcrumbs.
- Bake for 10 minutes, or until the topping is golden and the oysters are cooked through.
