Let's Get Started

  1. Preheat your oven to 450°F (230°C).
  2. Shuck the oysters, keeping them on the half shell.
  3. In a skillet, melt the butter over medium heat. Add the garlic and cook until fragrant.
  4. Add the spinach, Pernod, heavy cream, half the Parmesan, and salt and pepper. Cook until the mixture is thickened.
  5. Spoon the spinach mixture onto each oyster, then top with the remaining Parmesan and breadcrumbs.
  6. Bake for 10 minutes, or until the topping is golden and the oysters are cooked through.
