  1. Preheat the oven to 400°F.
  2. Season the halibut fillets with salt and pepper and drizzle with olive oil. Set aside.
  3. Peel the potatoes and cut into cylinders using a round cookie cutter. Melt the butter in a large oven-safe skillet over medium heat. Add the potatoes and cook until golden brown on all sides.
  4. Add the chicken stock, minced garlic, and thyme to the skillet. Bring to a simmer, then transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the potatoes are tender.
  5. While the potatoes are baking, heat a large skillet over medium-high heat. Add the halibut fillets and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork.
  6. Serve the halibut fillets with the potato fondant on the side.
