Pacific Halibut with Potato Fondant
A delightful main course featuring Pacific halibut served with a side of rich potato fondant.
Ingredients - Serves 4
- Fresh thyme - 2 sprigs
- Garlic - 2 cloves, minced
- Chicken stock - 1 cup
- Butter - 1/2 cup
- Potatoes - 4 large
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Pacific halibut fillets - 4 (6 ounce) fillets
Let's Get Started
- Preheat the oven to 400°F.
- Season the halibut fillets with salt and pepper and drizzle with olive oil. Set aside.
- Peel the potatoes and cut into cylinders using a round cookie cutter. Melt the butter in a large oven-safe skillet over medium heat. Add the potatoes and cook until golden brown on all sides.
- Add the chicken stock, minced garlic, and thyme to the skillet. Bring to a simmer, then transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the potatoes are tender.
- While the potatoes are baking, heat a large skillet over medium-high heat. Add the halibut fillets and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork.
- Serve the halibut fillets with the potato fondant on the side.
