Orange Blossom Macarons

Ingredients - Serves 24
- Orange juice - 1 tablespoon
- Orange zest - 1 tablespoon
- Butter - 1/2 cup
- Orange blossom water - 1/2 teaspoon
- Orange food coloring - A few drops
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Powdered sugar - 1 3/4 cups
- Almond flour - 1 cup
Let's Get Started
- Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour and powdered sugar and process until finely ground.
- In a large bowl, beat the egg whites until they form soft peaks. Gradually add the granulated sugar, beating until the mixture is glossy and stiff peaks form.
- Fold in the almond flour mixture, orange food coloring, and orange blossom water until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheets.
- Let the macarons sit at room temperature for 30 minutes to develop a skin.
- Bake for 15-20 minutes, or until the macarons are crisp and firm. Let cool completely on the baking sheets.
- While the macarons are cooling, make the filling: Beat the butter until creamy, then beat in the orange zest and juice.
- Once the macarons are cool, pipe or spread a small amount of the filling onto one macaron shell. Top with another shell to create a sandwich. Repeat with the remaining macarons and filling.
