Orange Creamsicle Cheesecake

- Whipped cream - For topping
- Boiling water - 1 cup
- Orange gelatin - 1 packet
- Heavy cream - 1 cup
- Vanilla extract - 1 teaspoon
- Orange juice - 1/4 cup
- Orange zest - 2 tablespoons
- Sugar - 1 cup
- Cream cheese - 16 oz
- Butter - 1/3 cup, melted
- Graham cracker crumbs - 1 1/2 cups
Let's Get Started
- Preheat the oven to 325°F.
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate mixing bowl, beat the cream cheese, sugar, orange zest, orange juice, and vanilla extract until smooth and creamy.
- In another bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
- In a small bowl, dissolve the orange gelatin in boiling water. Let it cool slightly, then add it to the cream cheese mixture. Mix until well combined.
- Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
- Bake for 50-60 minutes, or until the center is set and the edges are slightly golden.
- Remove from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight.
- Before serving, remove the cheesecake from the springform pan. Top with whipped cream and garnish with orange slices.
