Orange and Carrot Cake
This moist and flavorful orange and carrot cake is a delightful combination of citrus and vegetables.
Ingredients - Serves 8
- Orange zest - 1 tablespoon
- Powdered sugar - 1 cup
- Cream cheese - 8 ounces, softened
- Vanilla extract - 1 teaspoon
- Eggs - 3
- Granulated sugar - 1 cup
- Vegetable oil - 1/2 cup
- Salt - 1/2 teaspoon
- Cinnamon - 1 teaspoon
- Baking soda - 1 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 2 cups
- Oranges - 2, zest and juice
- Carrots - 2 cups, grated
Let's Get Started
- Preheat the oven to 350°F and grease a 9-inch round cake pan.
- In a large bowl, combine the grated carrots, orange zest, and orange juice. Set aside.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat together the vegetable oil, granulated sugar, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
