Orange and Almond Cake

Let's Get Started

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Place the oranges in a saucepan and cover with water. Bring to a boil and simmer for 1 hour, or until the oranges are soft.
  3. Remove the oranges from the water and let them cool. Once cooled, cut them into quarters and remove any seeds.
  4. In a food processor, blend the oranges until smooth.
  5. In a mixing bowl, combine the almond meal, sugar, eggs, baking powder, and vanilla extract. Mix well.
  6. Add the blended oranges to the mixture and stir until well combined.
  7. Pour the batter into the greased cake pan and smooth the top.
  8. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
  10. Once cooled, dust the cake with powdered sugar before serving.
