Orange and Almond Cake
This moist and flavorful orange and almond cake is made with fresh oranges and ground almonds.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Vanilla extract - 1 teaspoon
- Baking powder - 1 teaspoon
- Eggs - 4
- Sugar - 1/2 cup
- Almond meal - 1 cup
- Oranges - 2
Let's Get Started
- Preheat the oven to 350°F (175°C) and grease a round cake pan.
- Place the oranges in a saucepan and cover with water. Bring to a boil and simmer for 1 hour, or until the oranges are soft.
- Remove the oranges from the water and let them cool. Once cooled, cut them into quarters and remove any seeds.
- In a food processor, blend the oranges until smooth.
- In a mixing bowl, combine the almond meal, sugar, eggs, baking powder, and vanilla extract. Mix well.
- Add the blended oranges to the mixture and stir until well combined.
- Pour the batter into the greased cake pan and smooth the top.
- Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once cooled, dust the cake with powdered sugar before serving.
