Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, leeks and garlic and cook until the onions and leeks are soft and golden, about 15 minutes.
  3. Add the beef broth, wine, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  4. Preheat the oven to 350°F.
  5. Place the baguette slices on a baking sheet and top with the grated cheese.
