Gruyere Cheese Fondue

  2. Pour the wine into the pot and heat gently until hot, but not boiling.
  3. Gradually add the cheese, stirring until melted and smooth.
  4. In a small bowl, blend the cornstarch smoothly with the kirsch, then stir into the cheese mixture.
  5. Continue to cook gently, stirring constantly until the mixture is thick and creamy.
  6. Do not allow it to boil.
  7. Season with nutmeg and pepper.
  8. Serve the fondue immediately with chunks of French bread for dipping.
