Onion and Gouda Soup
This hearty onion and Gouda soup is a delicious twist on the classic French onion soup, with the added richness of Gouda cheese.
Ingredients - Serves 6
- French bread - 1 loaf, sliced
- Gouda cheese - 1 cup, grated
- Salt and pepper - To taste
- Bay leaf - 1
- Thyme - 1 teaspoon
- Dry white wine - 1/2 cup
- Beef broth - 4 cups
- All-purpose flour - 2 tablespoons
- Garlic - 3 cloves, minced
- Onions - 4 large, thinly sliced
- Butter - 2 tablespoons
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the onions and garlic, and cook until the onions are caramelized and golden brown, about 15-20 minutes.
- Sprinkle the flour over the onions and garlic, and stir to coat.
- Pour in the beef broth and white wine, and add the thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Preheat the oven to 350°F.
- Place the French bread slices on a baking sheet and toast in the oven for 5 minutes, or until lightly golden.
- Remove the bay leaf from the soup and discard.
- Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
- Return the soup to the pot and stir in the grated Gouda cheese until melted and well combined.
- Ladle the soup into bowls and serve with the toasted French bread slices on the side.
