Ingredients - Serves 2

Let's Get Started

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Add the chicken breast and cook until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the onion and carrot until softened.
  4. Add the frozen peas and cooked rice to the skillet. Stir in the ketchup and soy sauce. Season with salt and pepper to taste. Cook for 5 minutes, stirring occasionally.
  5. In a separate bowl, beat the eggs with a pinch of salt.
  6. Heat a non-stick skillet over medium heat and add a little vegetable oil.
  7. Pour half of the beaten eggs into the skillet and swirl to create a thin omelette. Cook until the edges are set but the center is still slightly runny.
  8. Place half of the fried rice mixture onto one side of the omelette.
  9. Fold the other side of the omelette over the rice, creating a half-moon shape. Slide the omurice onto a plate.
  10. Repeat the process with the remaining eggs and fried rice mixture to make a second omurice.
  11. Garnish with sliced green onions and serve hot.
