Omurice
Omurice is a popular Japanese dish consisting of fried rice wrapped in a thin omelette.
Ingredients - Serves 2
- Green onions - 2, thinly sliced (for garnish)
- Vegetable oil - 2 tablespoons
- Eggs - 4
- Salt and pepper - To taste
- Soy sauce - 1 tablespoon
- Ketchup - 2 tablespoons
- Frozen peas - 1/2 cup
- Carrot - 1, finely chopped
- Onion - 1, finely chopped
- Chicken breast - 1, diced
- Cooked rice - 2 cups
Let's Get Started
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Add the chicken breast and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil and sauté the onion and carrot until softened.
- Add the frozen peas and cooked rice to the skillet. Stir in the ketchup and soy sauce. Season with salt and pepper to taste. Cook for 5 minutes, stirring occasionally.
- In a separate bowl, beat the eggs with a pinch of salt.
- Heat a non-stick skillet over medium heat and add a little vegetable oil.
- Pour half of the beaten eggs into the skillet and swirl to create a thin omelette. Cook until the edges are set but the center is still slightly runny.
- Place half of the fried rice mixture onto one side of the omelette.
- Fold the other side of the omelette over the rice, creating a half-moon shape. Slide the omurice onto a plate.
- Repeat the process with the remaining eggs and fried rice mixture to make a second omurice.
- Garnish with sliced green onions and serve hot.
