Olla de Carne
Olla de Carne is a traditional Costa Rican beef stew filled with a variety of vegetables. It's a hearty and nutritious meal that's perfect for a cold day.
Ingredients - Serves 6
- Salt and pepper - To taste
- Cilantro - A handful, chopped
- Onion - 1, chopped
- Garlic - 3 cloves, minced
- Yucca - 1, peeled and sliced
- Corn - 2 ears, cut into chunks
- Chayote - 1, peeled and sliced
- Carrots - 2, peeled and sliced
- Potatoes - 4, peeled and quartered
- Beef - 1 kg, cut into chunks
Let's Get Started
- In a large pot, add the beef, garlic, onion, cilantro, salt, and pepper. Add enough water to cover the ingredients and bring to a boil.
- Reduce the heat to low and let it simmer for about 1 hour, or until the beef is tender.
- Add the potatoes, carrots, chayote, corn, and yucca to the pot. Let it simmer for another hour, or until the vegetables are tender.
- Adjust the seasoning if necessary and serve hot.
