Okra Curry
This flavorful okra curry is made with fresh okra, spices, and a rich tomato-based sauce.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Oil - 2 tablespoons
- Salt - To taste
- Red chili powder - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Tomatoes - 2 medium, chopped
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Okra - 1 pound, trimmed and cut into 1-inch pieces
Let's Get Started
- Heat oil in a large pan over medium heat.
- Add the chopped onion and cook until golden brown, about 5 minutes.
- Add the minced garlic and grated ginger. Cook for another 2 minutes.
- Add the chopped tomatoes, turmeric, cumin, coriander, red chili powder, and salt. Cook for 5 minutes, stirring occasionally.
- Add the okra pieces to the pan and mix well with the tomato-based sauce. Cover and cook for 10-15 minutes, or until the okra is tender.
- Garnish with fresh cilantro and serve hot with rice or naan bread.
