Ogbono Soup
Ogbono soup is a traditional Nigerian soup made with ground ogbono seeds, assorted meats, and vegetables.
Ingredients - Serves 6
- Pepper - To taste
- Salt - To taste
- Seasoning cubes - 2
- Okra - 1 cup, sliced
- Ugwu leaves - 2 cups, chopped
- Crayfish - 2 tablespoons, ground
- Dry fish - 100g, cleaned
- Stockfish - 100g, soaked
- Onion - 1 medium, chopped
- Palm oil - 1/2 cup
- Assorted meats - 500g, cut into bite-sized pieces
- Ogbono seeds - 1 cup, ground
Let's Get Started
- Heat the palm oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the assorted meats, stockfish, and dry fish. Cook for about 10 minutes, or until the meats are browned.
- Add the ground ogbono seeds and stir continuously for about 5 minutes to prevent lumps.
- Add water gradually while stirring to achieve desired consistency.
- Add the crayfish, seasoning cubes, salt, and pepper. Stir well.
- Cover the pot and let it simmer for about 20 minutes, or until the meats are tender.
- Add the sliced okra and ugwu leaves. Cook for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot with your choice of swallow (e.g., pounded yam, fufu, or eba).
