Obanyaki
Obanyaki is a popular Japanese street food that consists of sweet pancakes filled with various fillings.
Ingredients - Serves 6
- Powdered sugar - For dusting
- Matcha powder - 1 tablespoon
- Chocolate spread - 1/2 cup
- Red bean paste - 1 cup
- Vegetable oil - 2 tablespoons

- Milk - 1 cup

Let's Get Started
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, vanilla extract, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick pan or griddle over medium heat.
- Pour 1/4 cup of batter onto the pan and spread it into a circle.
- Cook for 2-3 minutes, or until bubbles form on the surface.
- Flip the pancake and cook for an additional 1-2 minutes.
- Remove the pancake from the pan and repeat with the remaining batter.
- Once all the pancakes are cooked, let them cool slightly.
- Spread red bean paste or chocolate spread onto half of each pancake.
- Fold the pancake in half to enclose the filling.
- Dust with matcha powder and powdered sugar before serving.
