Nigerian Curry
This Nigerian curry is a flavorful and aromatic dish made with a blend of spices, vegetables, and protein of your choice.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Coconut milk - 1 cup
- Carrot - 2, sliced
- Green bell pepper - 1, diced
- Red bell pepper - 1, diced
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Chicken - 500 grams, boneless and cut into pieces

- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
- Add the chicken pieces and cook until they are browned on all sides.
- Add the curry powder, turmeric powder, cumin powder, and coriander powder. Stir well to coat the chicken with the spices.
- Add the diced red and green bell peppers, sliced carrots, and coconut milk. Stir to combine.
- Cover the pan and simmer for 30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Season with salt to taste.
