New York Style Pretzels

- Unsalted butter - 4 tablespoons, melted
- Coarse salt - ¼ cup
- Water - 4 cups
- Baking soda - ¼ cup
- Salt - 2 teaspoons
- All-purpose flour - 4 cups
- Granulated sugar - 1 tablespoon
- Active dry yeast - 2 ¼ teaspoons
- Warm water - 1 ½ cups

- In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine flour and salt. Pour in the yeast mixture and stir until a dough forms.
- Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.

- Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.
- Carefully place the pretzels, one at a time, into the boiling water for 30 seconds. Remove with a slotted spoon and place them on the prepared baking sheet.
