Let's Get Started

  1. In a food processor, combine the flour, butter, and icing sugar until it resembles fine breadcrumbs.
  2. Add the egg yolk and enough water to process until the dough comes together.
  3. Turn the dough onto a lightly floured surface and knead until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Preheat oven to 200°C. Roll out the dough and cut into rounds to fit into a tart tin. Prick the bases with a fork.
  5. Bake for 10-15 minutes or until golden. Allow to cool.
  6. In a small saucepan, sprinkle the gelatine over 1/4 cup of water and let it sit for a few minutes. Heat gently until the gelatine has dissolved.
  7. In a bowl, combine the gelatine mixture, condensed milk, lemon juice, and vanilla essence. Stir until smooth.
  8. Pour the filling into the cooled tart shells and refrigerate until set.
  9. Once set, ice half of each tart with chocolate icing and the other half with white icing. Allow to set before serving.
