Neenish Tart
Neenish Tart is a classic Australian dessert featuring a sweet pastry crust, creamy filling, and a two-toned icing top.
Ingredients - Serves 12
- White icing - 1/2 cup
- Chocolate icing - 1/2 cup
- Vanilla essence - 1 teaspoon
- Lemon juice - 2 tablespoons
- Sweetened condensed milk - 1/2 cup
- Gelatine - 2 teaspoons
- Water - 2-3 tablespoons
- Egg yolk - 1
- Icing sugar - 1/2 cup
- Butter - 125g, chilled and cubed
- Plain flour - 2 cups
Let's Get Started
- In a food processor, combine the flour, butter, and icing sugar until it resembles fine breadcrumbs.
- Add the egg yolk and enough water to process until the dough comes together.
- Turn the dough onto a lightly floured surface and knead until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 200°C. Roll out the dough and cut into rounds to fit into a tart tin. Prick the bases with a fork.
- Bake for 10-15 minutes or until golden. Allow to cool.
- In a small saucepan, sprinkle the gelatine over 1/4 cup of water and let it sit for a few minutes. Heat gently until the gelatine has dissolved.
- In a bowl, combine the gelatine mixture, condensed milk, lemon juice, and vanilla essence. Stir until smooth.
- Pour the filling into the cooled tart shells and refrigerate until set.
- Once set, ice half of each tart with chocolate icing and the other half with white icing. Allow to set before serving.
