Malva Pudding
Malva Pudding is a classic South African dessert which has a spongy caramelized texture which is doused in a buttery cream sauce. This pudding is traditionally served with custard or ice cream.
Ingredients - Serves 8
- Vanilla essence - 1 teaspoon
- Cream - 1 cup
- Milk - 1 cup
- Vinegar - 1 teaspoon
- Butter - 1 tablespoon
- Salt - A pinch
- Baking soda - 1 teaspoon
- Plain flour - 1 cup
- Apricot jam - 1 tablespoon
- Egg - 1
- Sugar - 1 cup
Let's Get Started
- Preheat the oven to 180°C and grease a baking dish.
- Beat the sugar and eggs until fluffy then beat in the apricot jam.
- Sift the flour, baking soda and salt together and mix into the egg mixture.
- Melt the butter and add the vinegar and milk. Add this to the egg mixture and mix well.
- Pour into the baking dish and bake for 45 minutes until the top is nicely browned.
- In the meantime, prepare the sauce by melting together the cream, sugar, butter and vanilla essence.
- Pour over the pudding as soon as it comes out of the oven.
- Serve hot with custard or ice cream.
