Let's Get Started

  1. Wash the rice and drain well.
  2. In a pot, combine the rice, coconut milk, pandan leaves, and salt. Cook the rice according to your preferred method (stovetop, rice cooker, etc.)
  3. While the rice is cooking, prepare the accompaniments. Slice the cucumber, fry the anchovies until crispy, roast the peanuts, and boil the eggs.
  4. Once the rice is cooked, fluff it with a fork and remove the pandan leaves.
  5. Serve the nasi lemak by placing a scoop of coconut rice on a plate. Arrange the cucumber slices, fried anchovies, roasted peanuts, hard-boiled eggs, and fried chicken around the rice.
  6. Drizzle sambal sauce over the rice and garnish with sliced fresh chili.
