Nan E Barbari
Nan-e Barbari is a traditional Persian flatbread with a crispy crust and soft interior.
Ingredients - Serves 6
- Nigella seeds - 1 tablespoon
- Olive oil - 2 tablespoons
- Warm water - 1 1/4 cups
- Salt - 1 teaspoon
- Sugar - 1 teaspoon
- Active dry yeast - 2 1/4 teaspoons
- All-purpose flour - 3 cups
Let's Get Started
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix the ingredients together until a dough forms. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 450°F (230°C).
- Punch down the dough and divide it into 2 equal portions. Roll each portion into a rectangular shape, about 1/4 inch thick.
- Transfer the dough onto a baking sheet lined with parchment paper. Using your fingertips, make indentations all over the dough.
- Brush the dough with olive oil and sprinkle with nigella seeds.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
- Remove from the oven and let it cool slightly before serving.
- Slice and serve the Nan-e Barbari warm with your favorite dips or spreads.
