Mung Bean Soup
A hearty and healthy soup made with mung beans, vegetables, and spices.
Ingredients - Serves 4
- Cilantro - For garnish
- Salt and pepper - To taste
- Vegetable broth - 4 cups
- Celery - 2 stalks, chopped
- Carrot - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Mung beans - 1 cup, soaked overnight
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrot, and celery and cook until the vegetables are soft, about 10 minutes.
- Add the soaked mung beans and vegetable broth. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 45 minutes, or until the beans are tender.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with fresh cilantro.
