Mukimo
Mukimo is a traditional Kenyan dish made with mashed potatoes, maize, beans, and greens.
Ingredients - Serves 6
- Vegetable oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Greens (e.g., kale, spinach) - 2 cups, chopped
- Beans - 1 cup, cooked
- Maize - 1 cup, cooked
- Potatoes - 4 large, peeled and cubed
Let's Get Started
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and set aside.
- In a separate pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the cooked maize, beans, and chopped greens to the pot with the onions and garlic. Cook for 5 minutes, stirring occasionally.
- Mash the boiled potatoes using a potato masher or fork until smooth.
- Add the mashed potatoes to the pot with the other ingredients. Stir well to combine.
- Season with salt and black pepper, and continue cooking for another 10 minutes, or until heated through.
- Serve hot as a main dish or as a side dish with your favorite protein.
