Ingredients - Serves 6

Let's Get Started

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and set aside.
  2. In a separate pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  3. Add the cooked maize, beans, and chopped greens to the pot with the onions and garlic. Cook for 5 minutes, stirring occasionally.
  4. Mash the boiled potatoes using a potato masher or fork until smooth.
  5. Add the mashed potatoes to the pot with the other ingredients. Stir well to combine.
  6. Season with salt and black pepper, and continue cooking for another 10 minutes, or until heated through.
  7. Serve hot as a main dish or as a side dish with your favorite protein.
