  1. Clean the mussels by scrubbing them under cold water and removing any beards.
  2. In a large pot, melt the butter over medium heat. Add the shallots and garlic and cook until softened.
  3. Add the white wine to the pot and bring to a simmer.
  4. Add the mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened.

  6. Remove the mussels from the pot using a slotted spoon and transfer them to a serving bowl.
  7. Season the mussels with salt, pepper, and chopped parsley.
  8. Serve the moules frites with a side of french fries and mayonnaise for dipping.
