Mote de Queso
Mote de Queso is a traditional Colombian soup from the Caribbean region of the country. It's made with yam and costeño cheese, a type of Colombian cheese.
Ingredients - Serves 4
- Cilantro - A handful, chopped
- Garlic - 2 cloves, minced
- Green onions - 2, chopped
- Salt - To taste
- Water - 6 cups
- Costeño cheese - 200 grams, cut into chunks
- Yam - 500 grams, peeled and cut into chunks
Let's Get Started
- In a large pot, add the yam, water, and salt. Bring to a boil.
- Reduce the heat to medium and cook until the yam is soft, about 30 minutes.
- Add the cheese and continue cooking for another 15 minutes.
- In a separate pan, sauté the green onions and garlic until they are soft.
- Add the sautéed onions and garlic to the pot. Stir well.
- Add the chopped cilantro and cook for another 5 minutes.
- Serve hot, garnished with more fresh cilantro if desired.
