Moroccan Beef Tajine
A traditional Moroccan dish of tender beef slow-cooked with aromatic spices, dried fruits, and vegetables.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Honey - 1 tablespoon
- Dried apricots - 1 cup
- Carrots - 2, peeled and cut into 1-inch pieces
- Beef broth - 2 cups
- Salt and pepper - To taste
- Ground ginger - 1/2 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Beef chuck roast - 2 pounds, cut into 1-inch cubes
Let's Get Started
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the beef and cook until browned on all sides.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the cumin, coriander, cinnamon, turmeric, ginger, salt, and pepper and stir to coat the beef and onions in the spices.
- Add the beef broth and bring to a simmer.
- Cover the pot and reduce the heat to low. Cook for 2 hours, or until the beef is tender.
- Add the carrots, dried apricots, and honey to the pot. Cover and cook for another 30 minutes, or until the carrots are tender.
- Serve the tajine garnished with fresh cilantro.
