Moroccan Beef Tagine
A traditional Moroccan dish of tender beef and vegetables slow-cooked with aromatic spices.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Dried apricots - 1/2 cup
- Sweet potatoes - 2, peeled and cut into 1-inch pieces
- Carrots - 4, peeled and cut into 1-inch pieces
- Beef broth - 2 cups
- Cayenne pepper - 1/4 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef chuck roast - 2 pounds, cut into 1-inch pieces
Let's Get Started
- Season the beef with salt and pepper.
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook until browned on all sides.
- Add the onion and garlic to the pot and cook until softened.
- Add the cumin, coriander, cinnamon, turmeric, and cayenne and cook for 1 minute, stirring constantly.
- Add the beef broth and bring to a simmer. Cover and cook for 1 hour.
- Add the carrots, sweet potatoes, and apricots to the pot. Cover and cook for another hour, or until the beef and vegetables are tender.
- Serve the tagine garnished with fresh cilantro.
