Moroccan Beef Tagine

Ingredients - Serves 6

Let's Get Started

  1. Season the beef with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook until browned on all sides.
  3. Add the onion and garlic to the pot and cook until softened.
  4. Add the cumin, coriander, cinnamon, turmeric, and cayenne and cook for 1 minute, stirring constantly.
  5. Add the beef broth and bring to a simmer. Cover and cook for 1 hour.
  6. Add the carrots, sweet potatoes, and apricots to the pot. Cover and cook for another hour, or until the beef and vegetables are tender.
  7. Serve the tagine garnished with fresh cilantro.
