Molokhia with Shrimp
Molokhia is a traditional Egyptian dish made with jute leaves and served with shrimp. It is a flavorful and nutritious meal.
Ingredients - Serves 4
- Cooked rice - For serving
- Lemon wedges - For serving
- Salt and pepper - To taste
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Chicken or vegetable broth - 4 cups
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Shrimp - 1 pound, peeled and deveined
- Molokhia leaves - 2 cups, chopped
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
- Add the shrimp to the pot and cook until they turn pink and are cooked through, about 3-4 minutes. Remove the shrimp from the pot and set aside.
- In the same pot, add the chopped molokhia leaves and cook for 2-3 minutes, stirring occasionally.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat and simmer for 20 minutes.
- Add the ground coriander, ground cumin, salt, and pepper to the pot. Stir well to combine.
- Return the cooked shrimp to the pot and simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve the molokhia with shrimp over cooked rice. Garnish with lemon wedges.
