Mokimo
Mokimo is a traditional Kenyan dish made with mashed potatoes, corn, beans, and vegetables.
Ingredients - Serves 6
- Vegetable oil - 2 tablespoons
- Black pepper - To taste
- Salt - To taste
- Green bell pepper - 1, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Onion - 1 medium, finely chopped
- Beans - 1 cup, cooked
- Corn - 2 cups, cooked
- Potatoes - 4 large, peeled and cubed
Let's Get Started
- Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and set aside.
- In a separate pan, heat the vegetable oil over medium heat.
- Add the chopped onion, minced garlic, and diced green bell pepper. Cook until the vegetables are soft and fragrant, about 5 minutes.
- Add the diced tomato and cook for another 2 minutes.
- Add the cooked corn and beans to the pan and stir well.
- Mash the boiled potatoes until smooth and add them to the pan with the vegetables.
- Season with salt and black pepper to taste. Mix well to combine all the ingredients.
- Cook for another 5-10 minutes, stirring occasionally, until the flavors are well combined.
- Serve hot as a main dish or as a side dish with your favorite protein.
