Ingredients - Serves 6

Let's Get Started

  1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and set aside.
  2. In a separate pan, heat the vegetable oil over medium heat.
  3. Add the chopped onion, minced garlic, and diced green bell pepper. Cook until the vegetables are soft and fragrant, about 5 minutes.
  4. Add the diced tomato and cook for another 2 minutes.
  5. Add the cooked corn and beans to the pan and stir well.
  6. Mash the boiled potatoes until smooth and add them to the pan with the vegetables.
  7. Season with salt and black pepper to taste. Mix well to combine all the ingredients.
  8. Cook for another 5-10 minutes, stirring occasionally, until the flavors are well combined.
  9. Serve hot as a main dish or as a side dish with your favorite protein.
