Let's Get Started

  1. In a microwave-safe bowl, combine the glutinous rice flour, sugar, and water. Stir until well mixed.
  2. Cover the bowl with plastic wrap and microwave on high for 2 minutes.
  3. Remove from the microwave and stir the mixture. Cover again and microwave for an additional 1 minute.
  4. Dust a clean surface with cornstarch and transfer the cooked mochi dough onto it.
  5. Knead the dough until it becomes smooth and elastic. If desired, add a few drops of food coloring and knead until the color is evenly distributed.
  6. Divide the dough into 12 equal portions and flatten each portion into a small disc.
  7. Place a scoop of ice cream in the center of each mochi disc.
  8. Gently wrap the mochi around the ice cream, pinching the edges to seal.
  9. Repeat with the remaining mochi and ice cream.
  10. Place the mochi ice cream balls on a baking sheet lined with parchment paper and freeze for at least 2 hours, or until firm.
  11. Serve and enjoy!
