Mochi Ice Cream
Mochi ice cream is a delicious Japanese dessert made with a chewy mochi shell filled with ice cream.
Ingredients - Serves 12
- Food coloring (optional) - A few drops
- Ice cream (any flavor) - 12 small scoops
- Cornstarch - 1/4 cup
- Water - 3/4 cup
- Granulated sugar - 1/4 cup
- Glutinous rice flour - 1 cup
Let's Get Started
- In a microwave-safe bowl, combine the glutinous rice flour, sugar, and water. Stir until well mixed.
- Cover the bowl with plastic wrap and microwave on high for 2 minutes.
- Remove from the microwave and stir the mixture. Cover again and microwave for an additional 1 minute.
- Dust a clean surface with cornstarch and transfer the cooked mochi dough onto it.
- Knead the dough until it becomes smooth and elastic. If desired, add a few drops of food coloring and knead until the color is evenly distributed.
- Divide the dough into 12 equal portions and flatten each portion into a small disc.
- Place a scoop of ice cream in the center of each mochi disc.
- Gently wrap the mochi around the ice cream, pinching the edges to seal.
- Repeat with the remaining mochi and ice cream.
- Place the mochi ice cream balls on a baking sheet lined with parchment paper and freeze for at least 2 hours, or until firm.
- Serve and enjoy!
