Let's Get Started

  1. In a microwave-safe bowl, combine the glutinous rice flour and sugar.
  2. Gradually add water to the bowl while stirring, until the mixture becomes smooth and well combined.
  3. Cover the bowl with plastic wrap and microwave on high for 2 minutes.
  4. Remove the bowl from the microwave and stir the mixture with a wooden spoon.
  5. Cover the bowl again and microwave for another 2 minutes.
  6. Repeat the process of stirring and microwaving for 2 minutes at a time, until the mixture becomes sticky and translucent.
  7. If desired, add a few drops of food coloring to the mixture and stir until evenly colored.
  8. Dust a clean surface with cornstarch to prevent sticking.
  9. Transfer the mochi mixture onto the cornstarch-dusted surface and knead it gently until smooth.
  10. Roll out the mochi into a thin layer, about 1/4 inch thick.
  11. Use a round cookie cutter or a small glass to cut out circles from the mochi.
  12. Repeat the process until all the mochi is used.
  13. Serve the mochi dusted with kinako (roasted soybean flour) or matcha powder.
