Mochi
Mochi is a traditional Japanese rice cake made from glutinous rice. It has a soft and chewy texture, and can be enjoyed on its own or used in various desserts.
Ingredients - Serves 12
- Kinako (roasted soybean flour) or matcha powder (for dusting) - For serving
- Food coloring (optional) - A few drops
- Cornstarch - 1/4 cup
- Water - 1 1/2 cups
- Sugar - 1/2 cup
- Glutinous rice flour - 2 cups
Let's Get Started
- In a microwave-safe bowl, combine the glutinous rice flour and sugar.
- Gradually add water to the bowl while stirring, until the mixture becomes smooth and well combined.
- Cover the bowl with plastic wrap and microwave on high for 2 minutes.
- Remove the bowl from the microwave and stir the mixture with a wooden spoon.
- Cover the bowl again and microwave for another 2 minutes.
- Repeat the process of stirring and microwaving for 2 minutes at a time, until the mixture becomes sticky and translucent.
- If desired, add a few drops of food coloring to the mixture and stir until evenly colored.
- Dust a clean surface with cornstarch to prevent sticking.
- Transfer the mochi mixture onto the cornstarch-dusted surface and knead it gently until smooth.
- Roll out the mochi into a thin layer, about 1/4 inch thick.
- Use a round cookie cutter or a small glass to cut out circles from the mochi.
- Repeat the process until all the mochi is used.
- Serve the mochi dusted with kinako (roasted soybean flour) or matcha powder.
