Mađarica
Mađarica is a traditional Croatian layered cake made with thin layers of chocolate and vanilla pastry cream.
Ingredients - Serves 12
- Unsalted butter - 2 tablespoons
- Semi-sweet chocolate - 4 ounces
- For the chocolate glaze: -
- Vanilla extract - 1 teaspoon
- Cornstarch - 1/4 cup
- Egg yolks - 4
- Granulated sugar - 1/2 cup
- Milk - 2 cups
- For the vanilla pastry cream: -
- Milk - 1/2 cup
- Vanilla extract - 1 teaspoon
- Egg - 1
- Granulated sugar - 1 cup
- Unsalted butter - 1/2 cup, softened
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Cocoa powder - 1/4 cup
- All-purpose flour - 2 cups

Let's Get Started
- Preheat the oven to 350°F (175°C). Grease and flour a rectangular baking pan.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt for the chocolate layers.
- In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
- Spread the chocolate batter evenly into the prepared baking pan.
- Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- Meanwhile, prepare the vanilla pastry cream. In a saucepan, heat the milk until steaming but not boiling.
- In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until well combined.
- Slowly pour the hot milk into the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
- Remove from heat and stir in the vanilla extract. Let cool completely.
- Once the chocolate layer and vanilla pastry cream are cooled, spread a thin layer of pastry cream over the chocolate layer.
- Place another chocolate layer on top and repeat the process until all layers are used, finishing with a layer of pastry cream on top.
- Cover the cake with plastic wrap and refrigerate for at least 2 hours, or overnight.
- Before serving, prepare the chocolate glaze. In a microwave-safe bowl, melt the chocolate and butter together in 30-second intervals, stirring until smooth.
- Pour the chocolate glaze over the chilled cake, spreading it evenly with a spatula.
- Return the cake to the refrigerator for 30 minutes to allow the glaze to set.
- Slice and serve the Mađarica cake chilled. Enjoy!
