  1. Clean the chilies, remove the seeds and veins. Soak them in hot water until they are soft.
  2. Blend the softened chilies with garlic, cumin, thyme, bay leaves, black pepper, salt and water until smooth.
  3. Marinate the meat in the chili mixture for at least 2 hours, or overnight for best results.
  4. Wrap the marinated meat in maguey leaves, tying them securely with string.
  5. Place the wrapped meat in a steamer and steam for about 4 hours, or until the meat is tender and fully cooked.
  6. Serve the mixiotes hot, with the sauce from the cooking process.
