Mixiotes
Mixiotes is a traditional Mexican dish, typically made with meat, usually lamb or chicken, marinated in a spicy sauce, then slow-cooked in maguey leaves.
Ingredients - Serves 4
- Water - 2 cups
- Salt - To taste
- Black pepper - 1 teaspoon
- Bay leaves - 2
- Thyme - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 4 cloves
- Ancho chilies - 2, dried
- Guajillo chilies - 4, dried
- Maguey leaves - 4
- Lamb or chicken - 1 kg
Let's Get Started
- Clean the chilies, remove the seeds and veins. Soak them in hot water until they are soft.
- Blend the softened chilies with garlic, cumin, thyme, bay leaves, black pepper, salt and water until smooth.
- Marinate the meat in the chili mixture for at least 2 hours, or overnight for best results.
- Wrap the marinated meat in maguey leaves, tying them securely with string.
- Place the wrapped meat in a steamer and steam for about 4 hours, or until the meat is tender and fully cooked.
- Serve the mixiotes hot, with the sauce from the cooking process.
