Milho Verde
Milho Verde is a traditional Brazilian dish made with fresh corn kernels, coconut milk, and spices.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Tomato - 1, diced
- Bell pepper - 1, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Coconut milk - 1 cup
- Fresh corn kernels - 4 cups
Let's Get Started
- Heat olive oil in a large pan over medium heat.
- Add the onion and garlic, and sauté until translucent.
- Add the bell pepper and tomato, and cook for another 2 minutes.
- Add the fresh corn kernels and cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and season with salt and black pepper.
- Simmer for 10 minutes, or until the corn is tender.
- Stir in the chopped cilantro and remove from heat.
- Serve hot as a side dish or as a main course with rice and beans.
