Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the bread pieces and cook until they are crispy and golden brown. Remove the bread from the skillet and set aside.
  3. In the same skillet, add the garlic, bell peppers, and onion. Cook until the vegetables are soft and the onion is translucent.
  4. In a separate bowl, beat the eggs and season with salt and pepper.
  5. Pour the eggs into the skillet with the vegetables and cook, stirring constantly, until the eggs are scrambled and fully cooked.
  6. Add the crispy bread pieces back into the skillet and stir to combine.
  7. Sprinkle the shredded cheese over the top of the migas and cover the skillet. Let it sit for a few minutes until the cheese is melted.
  8. Garnish with chopped cilantro before serving.
