Ingredients - Serves 6

Let's Get Started

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the rice and cook until lightly golden, stirring frequently, about 5 minutes.
  3. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 3 minutes.
  4. Stir in the tomato sauce, chicken broth, cumin, chili powder, and salt.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  6. Stir in the frozen peas and carrots, cover, and cook for an additional 5 minutes or until the rice is tender and the vegetables are heated through.
  7. Remove from heat and let the rice sit, covered, for 5 minutes.
  8. Fluff the rice with a fork, then sprinkle with chopped cilantro.
  9. Serve hot with lime wedges on the side.
