Mexican Rice
This flavorful Mexican rice is made with tomatoes, onions, garlic, and spices.
Ingredients - Serves 6
- Lime wedges - For serving
- Fresh cilantro - 2 tablespoons, chopped
- Frozen peas and carrots - 1/2 cup
- Salt - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Cumin - 1 teaspoon
- Chicken broth - 2 cups
- Tomato sauce - 1/2 cup
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- White rice - 1 cup
- Vegetable oil - 2 tablespoons
Let's Get Started
- Heat the vegetable oil in a large skillet over medium heat.
- Add the rice and cook until lightly golden, stirring frequently, about 5 minutes.
- Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 3 minutes.
- Stir in the tomato sauce, chicken broth, cumin, chili powder, and salt.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- Stir in the frozen peas and carrots, cover, and cook for an additional 5 minutes or until the rice is tender and the vegetables are heated through.
- Remove from heat and let the rice sit, covered, for 5 minutes.
- Fluff the rice with a fork, then sprinkle with chopped cilantro.
- Serve hot with lime wedges on the side.
