Merluza a La Vasca
Merluza a la Vasca, or Hake Basque Style, is a traditional Spanish dish that features hake fish in a flavorful green sauce.
Ingredients - Serves 4
- Clams - 12
- Asparagus - 1 cup, chopped
- Green peas - 1 cup
- Parsley - 1/4 cup, chopped
- White wine - 1/2 cup
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Hake fillets - 4 (6 ounce)
Let's Get Started
- Season the hake fillets with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the hake fillets and cook until golden brown on both sides, about 3 minutes per side. Remove the hake from the skillet and set aside.
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- Add the white wine to the skillet and bring to a simmer. Cook until the wine has reduced by half, about 5 minutes.
- Add the parsley, green peas, asparagus, and clams to the skillet. Cover and cook until the clams have opened, about 5 minutes.
- Return the hake to the skillet and spoon the sauce over the fillets. Cover and cook until the hake is cooked through, about 5 minutes.
- Serve the hake with the sauce and vegetables.
