Mee Rebus
Mee Rebus is a popular Malay noodle dish in Southeast Asia. It features yellow noodles in a flavorful gravy, topped with a variety of ingredients.
Ingredients - Serves 4
- Cooking oil - 2 tablespoons
- Fried shallots - 2 tablespoons
- Spring onions - 2 stalks, chopped
- Lime - 1, cut into wedges
- Hard-boiled eggs - 4, halved
- Bean sprouts - 1 cup
- Tofu - 200g, fried and sliced
- Shrimp - 200g, peeled and deveined
- Potatoes - 2 medium, boiled and mashed
- Yellow noodles - 400g
Let's Get Started
- Heat the cooking oil in a large pot over medium heat.
- Add the mashed potatoes and stir-fry for 2 minutes.
- Add the shrimp and cook until they turn pink.
- Pour in 1 liter of water and bring to a boil.
- Add the mee rebus paste (available in stores) and stir well.
- Simmer for 20 minutes to allow the flavors to develop.
- Meanwhile, blanch the yellow noodles and bean sprouts in boiling water for 1-2 minutes. Drain and set aside.
- To serve, place a portion of yellow noodles in a bowl.
- Ladle the mee rebus gravy over the noodles.
- Top with fried tofu, bean sprouts, shrimp, and halved hard-boiled eggs.
- Garnish with chopped spring onions and fried shallots.
- Serve hot with lime wedges on the side.
