Let's Get Started

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the mashed potatoes and stir-fry for 2 minutes.
  3. Add the shrimp and cook until they turn pink.
  4. Pour in 1 liter of water and bring to a boil.
  5. Add the mee rebus paste (available in stores) and stir well.
  6. Simmer for 20 minutes to allow the flavors to develop.
  7. Meanwhile, blanch the yellow noodles and bean sprouts in boiling water for 1-2 minutes. Drain and set aside.
  8. To serve, place a portion of yellow noodles in a bowl.
  9. Ladle the mee rebus gravy over the noodles.
  10. Top with fried tofu, bean sprouts, shrimp, and halved hard-boiled eggs.
  11. Garnish with chopped spring onions and fried shallots.
  12. Serve hot with lime wedges on the side.
