Ingredients - Serves 4

Let's Get Started

  1. Soak the rice noodles in warm water for 10 minutes, then drain.
  2. Heat the oil in a wok or large frying pan over medium heat.
  3. Add the garlic and stir-fry until fragrant.
  4. Add the chicken and stir-fry until cooked through.
  5. Add the carrot and bell pepper and stir-fry for 2 minutes.
  6. Push the ingredients to one side of the wok and crack the egg into the other side. Scramble the egg and mix with the other ingredients.
  7. Add the noodles, soy sauce, oyster sauce, and sugar. Stir-fry for 2-3 minutes, until the noodles are soft and coated in the sauce.
  8. Add the spring onions and stir-fry for another minute.
  9. Serve hot.
