Mediterranean Chicken Pita
This Mediterranean-inspired chicken pita is filled with grilled chicken, fresh vegetables, and a flavorful yogurt sauce.
Ingredients - Serves 2
- Pita bread - 2
- Salt and pepper - To taste
- Fresh parsley - 2 tablespoons, chopped
- Kalamata olives - 1/4 cup, pitted and sliced
- Red onion - 1/4, thinly sliced
- Tomato - 1, diced
- Cucumber - 1/2, diced
- Greek yogurt - 1/2 cup
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Chicken breast - 2 boneless, skinless
Let's Get Started
- In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breasts and marinate for 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then slice it into strips.
- In a separate bowl, mix Greek yogurt, diced cucumber, diced tomato, sliced red onion, sliced Kalamata olives, chopped fresh parsley, salt, and pepper to make the yogurt sauce.
- Warm the pita bread in a toaster or oven.
- Spread a generous amount of the yogurt sauce on each pita bread.
- Top with the sliced grilled chicken and additional vegetables if desired.
- Fold the pita bread in half and serve.
