Mauritian Curry
This Mauritian curry is a flavorful and aromatic dish made with a blend of spices, vegetables, and protein of your choice.
Ingredients - Serves 4
- Water - 1 cup
- Salt - To taste
- Fresh cilantro - Handful, chopped
- Tomatoes - 2, diced
- Coconut milk - 1 can (400ml)
- Protein of your choice (chicken, beef, tofu, etc.) - 500g, cubed
- Bell peppers - 2, diced
- Carrots - 2, peeled and sliced
- Potatoes - 2, peeled and diced
- Cayenne pepper - 1/2 teaspoon (optional)
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Vegetable oil - 2 tablespoons
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.
- Add the curry powder, turmeric powder, cumin powder, coriander powder, and cayenne pepper (if using). Stir well to coat the onions and spices.
- Add the diced potatoes, sliced carrots, and diced bell peppers. Cook for a few minutes until the vegetables start to soften.
- Add the cubed protein of your choice and cook until browned on all sides.
- Pour in the coconut milk and diced tomatoes. Stir well to combine.
- Add salt to taste and pour in the water. Bring the curry to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender and the flavors have melded together.
- Garnish with freshly chopped cilantro before serving.
- Serve the Mauritian curry hot with steamed rice or naan bread.
