Let's Get Started

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.
  3. Add the curry powder, turmeric powder, cumin powder, coriander powder, and cayenne pepper (if using). Stir well to coat the onions and spices.
  4. Add the diced potatoes, sliced carrots, and diced bell peppers. Cook for a few minutes until the vegetables start to soften.
  5. Add the cubed protein of your choice and cook until browned on all sides.
  6. Pour in the coconut milk and diced tomatoes. Stir well to combine.
  7. Add salt to taste and pour in the water. Bring the curry to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender and the flavors have melded together.
  8. Garnish with freshly chopped cilantro before serving.
  9. Serve the Mauritian curry hot with steamed rice or naan bread.
