  1. In a bowl, mix together the soy sauce, honey, and half of the minced garlic to make the marinade.
  2. Place the flank steak in the marinade and let it sit for at least 30 minutes.
  3. Preheat the oven to 400°F.
  4. Toss the sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then spread them out on a baking sheet.
  5. Roast the sweet potatoes in the oven for 30 minutes, or until they are tender and golden.
  6. While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a pan over medium heat.
  7. Add the remaining minced garlic to the pan and saute for 1 minute.
  8. Add the spinach to the pan and saute until it is wilted.
  9. Remove the steak from the marinade and grill it on high heat for 5-7 minutes on each side, or until it reaches your desired level of doneness.
  10. Let the steak rest for a few minutes before slicing it against the grain.
  11. Serve the sliced steak with the roasted sweet potatoes and sauteed spinach.
