Ash E Anar
Ash-e Anar is a traditional Persian soup made with pomegranate juice, herbs, and meatballs.
Ingredients - Serves 6
- Greek yogurt - 1/2 cup
- Lemon juice - 2 tablespoons
- Spinach - 2 cups, chopped
- Chickpeas - 1/2 cup, cooked
- Lentils - 1/2 cup
- Pomegranate juice - 4 cups
- Salt and pepper - To taste
- Turmeric - 1 teaspoon
- Dried fenugreek leaves - 1 tablespoon
- Mint - 1/4 cup, chopped
- Cilantro - 1/4 cup, chopped
- Parsley - 1/4 cup, chopped
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Ground beef - 1/2 pound
Let's Get Started
- In a bowl, mix together the ground beef, onion, garlic, parsley, cilantro, mint, dried fenugreek leaves, turmeric, salt, and pepper. Form small meatballs.
- In a large pot, bring the pomegranate juice to a boil. Add the lentils and meatballs. Simmer for 30 minutes.
- Add the chickpeas and spinach to the pot. Cook for an additional 10 minutes.
- Stir in the lemon juice and adjust the seasoning if needed.
- Serve hot, garnished with a dollop of Greek yogurt.
