Maple Glazed Salmon with Quinoa
This delicious and healthy dish features a sweet and savory maple glaze on perfectly cooked salmon, served over fluffy quinoa.
Ingredients - Serves 4
- Green onions - 2, chopped
- Salt and pepper - To taste
- Water - 2 cups
- Quinoa - 1 cup
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Maple syrup - 1/4 cup
- Salmon fillets - 4 (6 ounce) fillets
Let's Get Started
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the maple syrup, soy sauce, and minced garlic.
- Place the salmon fillets in a baking dish and pour the maple syrup mixture over them.
- Bake the salmon in the preheated oven for about 15 minutes, or until it flakes easily with a fork.
- While the salmon is baking, rinse the quinoa under cold water until the water runs clear.
- Bring the 2 cups of water to a boil in a saucepan, then add the quinoa and a pinch of salt.
- Reduce the heat to low, cover the saucepan, and let the quinoa simmer for about 15 minutes, or until all the water is absorbed.
- Fluff the cooked quinoa with a fork and divide it among 4 plates.
- Place a salmon fillet on top of each mound of quinoa, drizzle any remaining glaze from the baking dish over the salmon, and sprinkle with chopped green onions.
- Serve the maple-glazed salmon with quinoa immediately.
