Maple Glazed Salmon with Quinoa

Let's Get Started

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the maple syrup, soy sauce, and minced garlic.
  3. Place the salmon fillets in a baking dish and pour the maple syrup mixture over them.
  4. Bake the salmon in the preheated oven for about 15 minutes, or until it flakes easily with a fork.
  5. While the salmon is baking, rinse the quinoa under cold water until the water runs clear.
  6. Bring the 2 cups of water to a boil in a saucepan, then add the quinoa and a pinch of salt.
  7. Reduce the heat to low, cover the saucepan, and let the quinoa simmer for about 15 minutes, or until all the water is absorbed.
  8. Fluff the cooked quinoa with a fork and divide it among 4 plates.
  9. Place a salmon fillet on top of each mound of quinoa, drizzle any remaining glaze from the baking dish over the salmon, and sprinkle with chopped green onions.
  10. Serve the maple-glazed salmon with quinoa immediately.
