Maple Bacon Ice Cream
A sweet and savory ice cream flavor that combines the smokiness of bacon with the sweetness of maple syrup.
Ingredients - Serves 4
- Sugar - 1/2 cup
- Egg yolks - 6
- Milk - 1 cup
- Heavy cream - 2 cups
- Maple syrup - 1/2 cup
- Bacon - 4 slices
Let's Get Started
- Cook the bacon in a pan until crispy. Let it cool and then chop it into small pieces.
- In a saucepan, combine the heavy cream, milk, and half of the sugar. Heat over medium heat until it begins to steam.
- In a separate bowl, whisk together the egg yolks and the remaining sugar.
- Slowly pour the hot cream mixture into the egg yolks, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
- Remove from heat and stir in the maple syrup.
- Let the mixture cool, then refrigerate for at least 2 hours or overnight.
- Churn the mixture in an ice cream maker according to the manufacturer's instructions.
- In the last few minutes of churning, add the chopped bacon.
- Transfer the ice cream to a lidded container and freeze for at least 2 hours before serving.
