Maple Bacon Ice Cream

Ingredients - Serves 4

Let's Get Started

  1. Cook the bacon in a pan until crispy. Let it cool and then chop it into small pieces.
  2. In a saucepan, combine the heavy cream, milk, and half of the sugar. Heat over medium heat until it begins to steam.
  3. In a separate bowl, whisk together the egg yolks and the remaining sugar.
  4. Slowly pour the hot cream mixture into the egg yolks, whisking constantly.
  5. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  6. Remove from heat and stir in the maple syrup.
  7. Let the mixture cool, then refrigerate for at least 2 hours or overnight.
  8. Churn the mixture in an ice cream maker according to the manufacturer's instructions.
  9. In the last few minutes of churning, add the chopped bacon.
  10. Transfer the ice cream to a lidded container and freeze for at least 2 hours before serving.
