Mango Sticky Rice Pudding
A delicious Thai dessert made with sticky rice, fresh mango, and coconut milk.
Ingredients - Serves 4
- Coconut flakes - 1 tablespoon
- Sesame seeds - 1 tablespoon
- Mango - 2 ripe, sliced
- Salt - 1/4 teaspoon
- Sugar - 1/4 cup
- Coconut milk - 1 cup
- Sticky rice - 1 cup
Let's Get Started
- Rinse the sticky rice under cold water until the water runs clear.
- Soak the rice in water for at least 4 hours or overnight.
- Drain the rice and place it in a steamer basket lined with cheesecloth.
- Steam the rice over high heat for 20-25 minutes, or until it is tender and cooked through.
- In a saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar is dissolved.
- Remove the cooked rice from the steamer and transfer it to a bowl.
- Pour the coconut milk mixture over the rice and stir gently to combine.
- Let the rice sit for 10-15 minutes to absorb the coconut milk.
- To serve, place a scoop of the sticky rice on a plate and top with sliced mango.
- Sprinkle with sesame seeds and coconut flakes.
