Mango Custard
This creamy and refreshing mango custard is the perfect dessert for mango lovers.
Ingredients - Serves 6
- Fresh mint leaves - For garnish
- Whipped cream - 1/2 cup
- Vanilla extract - 1 teaspoon
- Cornstarch - 2 tablespoons
- Sugar - 1/2 cup
- Milk - 2 cups
- Ripe mangoes - 2, peeled and diced
Let's Get Started
- In a blender, puree the diced mangoes until smooth.
- In a saucepan, heat the milk over medium heat until hot but not boiling.
- In a separate bowl, whisk together the sugar and cornstarch.
- Slowly pour the sugar and cornstarch mixture into the hot milk, stirring constantly.
- Continue to cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon.
- Remove the saucepan from heat and stir in the vanilla extract.
- Allow the custard to cool for a few minutes, then stir in the mango puree.
- Transfer the custard to serving bowls or glasses and refrigerate for at least 2 hours, or until set.
- Before serving, top each custard with a dollop of whipped cream and garnish with fresh mint leaves.
