Let's Get Started

  1. In a blender, puree the diced mangoes until smooth.
  2. In a saucepan, heat the milk over medium heat until hot but not boiling.
  3. In a separate bowl, whisk together the sugar and cornstarch.
  4. Slowly pour the sugar and cornstarch mixture into the hot milk, stirring constantly.
  5. Continue to cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon.
  6. Remove the saucepan from heat and stir in the vanilla extract.
  7. Allow the custard to cool for a few minutes, then stir in the mango puree.
  8. Transfer the custard to serving bowls or glasses and refrigerate for at least 2 hours, or until set.
  9. Before serving, top each custard with a dollop of whipped cream and garnish with fresh mint leaves.
