Let's Get Started

  1. In a large pot, combine the lingonberries, water, and sugar.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  3. In a small bowl, mix the potato starch with a little water to make a slurry.
  4. Slowly pour the slurry into the soup while stirring continuously.
  5. Continue to cook for another 5 minutes, or until the soup has thickened.
  6. Remove the pot from the heat and stir in the cinnamon.
  7. Allow the soup to cool to room temperature, then refrigerate for at least 2 hours.
  8. Serve the kielonmarjakeitto cold, topped with a dollop of whipped cream and garnished with fresh mint leaves.
