Kielonmarjakeitto
Kielonmarjakeitto is a traditional Finnish berry soup made with lingonberries and served cold.
Ingredients - Serves 6
- Fresh mint leaves - For garnish
- Whipped cream - For serving
- Cinnamon - 1 teaspoon
- Potato starch - 2 tablespoons
- Sugar - 150g
- Water - 1 liter
- Lingonberries - 500g
Let's Get Started
- In a large pot, combine the lingonberries, water, and sugar.
- Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
- In a small bowl, mix the potato starch with a little water to make a slurry.
- Slowly pour the slurry into the soup while stirring continuously.
- Continue to cook for another 5 minutes, or until the soup has thickened.
- Remove the pot from the heat and stir in the cinnamon.
- Allow the soup to cool to room temperature, then refrigerate for at least 2 hours.
- Serve the kielonmarjakeitto cold, topped with a dollop of whipped cream and garnished with fresh mint leaves.
